Great Introduction to Epistemology

This is an excellent introduction to Epistemology (the 3rd edition is even better as it covers more topics in contemporary epistemology). Pritchard's writing style is exceptionally clear and he explains difficult concepts from epistemology in a clear and concise manner. At the end of each chapter, Pritchard provides a summary of the discussion in the previous chapter. The chapters are so well summarized, you could almost read the summaries and not read the actual chapters (though you would miss all the helpful examples)!
Routledge should really consider putting together an anthology to go with this.
If you know very little about epistemology, this is the best place to start. It is so clear, concise, and readable that you'll wonder why more philosophers don't adopt a similar writing style for intro texts.
If you have some background in epistemology, perhaps Audi's "Epistemology: A Contemporary Introduction to the Theory of Knowledge" or the Goldman/McGrath "Epistemology: A Contemporary Introduction" would be a better choice.
However, if you're just getting started, or need a quick refresher, Pritchard's book is highly recommended.

Just what the Undergraduates need!

This is an excellent text, especially for Undergrads just beginning the process of exploration of epistemology and covering the 'basics' in the 'Anglo-American' philosophical tradition.
